โ 2 large chicken breasts, sliced in half lengthwise

โ 4 tbsp Gluten-Free Bake Mix 2 OR almond flour
โ 2 tbsp Parmesan cheese (canister)
โ ยฝ tsp salt
โ ยผ tsp black pepper
๐ง For the Garlic Butter Parmesan Sauce:
โ 2 tbsp butter
โ 3 tbsp crushed garlic
โ 1ยผ cups chicken stock
โ 1 cup whipping cream
โ ยผ cup grated mozzarella cheese
โ 2 tbsp Parmesan cheese
โ ยฝ tsp dried cilantro OR parsley
โ 2 tsp chopped fresh cilantro OR parsley

๐ช Slice chicken breasts lengthwise to create thin cutlets.
2๏ธโฃ Make the Breading:
๐ฅฃ Mix almond flour (or gluten-free mix), Parmesan cheese, salt, and pepper in a bowl.
๐ Coat chicken cutlets evenly in the mixture.
3๏ธโฃ Cook the Chicken:
๐ฅ Heat olive oil in a frying pan.
๐ Cook chicken until golden brown and almost done, turning frequently. Set aside.
4๏ธโฃ Make the Garlic Butter Parmesan Sauce:
๐ง Melt butter over medium-low heat in another pan.
๐ง Sautรฉ garlic until golden and fragrant.
๐ฅฃ Add chicken stock, whipping cream, mozzarella, Parmesan, and dried herbs.
