Ingredients
Meatloaf:
- 2 lbs ground chicken
- 1 cup grated Parmesan
- ½ cup panko breadcrumbs
- 2 large eggs
- 4 cloves garlic, minced
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp dried basil
- ½ tsp dried parsley
- ½ tsp salt
- ½ tsp black pepper
- ¼ cup whole milk
Garlic Parmesan Glaze:
- 3 tbsp unsalted butter
- 2 cloves garlic, minced
- ¼ cup grated Parmesan
- 1 tbsp chopped parsley
- Pinch of salt
Directions
1️⃣ Preheat oven to 375°F (190°C). Line a baking sheet with parchment or grease a loaf pan.
2️⃣ In a large bowl, mix ground chicken, Parmesan, breadcrumbs, eggs, garlic, spices, and milk. Don’t overmix!
3️⃣ Shape into a loaf on the baking sheet or press into the loaf pan.
4️⃣ Bake for 40–45 min, until internal temp hits 165°F (74°C).
5️⃣ For the glaze, melt butter in a saucepan, sauté garlic 1–2 min, then stir in Parmesan and parsley. Cook until slightly thickened.
6️⃣ Brush meatloaf with glaze and bake 5–7 min more.
