Ingredients

  • ½ teaspoon black pepper powder
  • ÂĽ teaspoon turmeric powder
  • ½ teaspoon cumin powder
  • ½ teaspoon garam masala
  • 2 tablespoons plain yogurt (full-fat works best for tenderness)
  • Salt, to taste
  • 1 tablespoon oil or melted butter (for cooking and brushing)

Instructions

1. Marinate the Chicken
In a large mixing bowl, combine the yogurt, lemon juice, ginger-garlic paste, red chili powder, black pepper, turmeric, cumin powder, garam masala, and salt. Mix until smooth.
Add the chicken pieces and coat them thoroughly with the marinade, massaging it into the meat (make small slits in thicker pieces for deeper flavor).
Cover and refrigerate for at least 2 hours—overnight marinating yields the most tender, flavorful results.

2. Cook the Chicken (Choose your method):

  • Oven Method
    Preheat oven to 200°C (400°F). Line a baking tray with foil and place a greased wire rack on top. Arrange the marinated chicken on the rack in a single layer.
    Bake for 25–30 minutes, flipping halfway through, until the chicken is cooked through (internal temperature 75°C/165°F) and edges are charred.
  • Grill Pan/Stovetop Method
    Heat a grill pan or heavy skillet over medium heat and brush with oil.

  • Air Fryer Method
    Preheat air fryer to 190°C (375°F). Place chicken in the basket in a single layer (cook in batches if needed).
    Air fry for 20–22 minutes, flipping halfway, until crispy and cooked through.

3. Finishing Touch
Brush the hot chicken with melted butter or oil and grill/broil/air fry for an extra 2–3 minutes for enhanced smoky flavor and glossy finish.
